Almond Cookies

Ingredients

  • 1 cup
  • 4 cups Flour
  • 1 cup Sugar
  • 1 teaspoon Baking Soda
  • 1 tablespoon Almond Extract
  • 1 cup Vegetable Oil
  • Red Food Coloring (optional)

Directions

Preheat oven to 350F. Mix all ingredients together and roll into balls (slightly smaller than a ping pong ball) and place on an un-greased baking sheet, leaving 2" between each cookie, as they will spread out during baking.   Then, press down using your thumb till about 1/4" thick . Optionally, you can dip the end of a chopstick into red food coloring and place a red mark on each cookie prior to cooking. Bake for 10-14 minutes, depending on thickness, until edges turn slightly brown.  They will be soft to the touch at this point, remove from oven and let cool before removing from baking sheet, approx. 15 min., place on cooling racks to cool. Recipe makes approx. 3 doz. large cookies.
