Ingredients

  • 1 envelope Unflavored gelatin
  • 1 1/2 cups Water Divided
  • 1/2 cup Evaporated Milk
  • 1/2 cup Sugar
  • 2 teaspoons Almond Extract
  • Fruit w/syrup See instructions

Directions

This is a refreshing way to end a meal, satisfying your sweet tooth without being heavy. Heat milk, 1 cup of water and sugar till sugar dissolves, but do not bring to a boil.; Dissolve the gelatin in 1/2 cup water and stir mixture into heated milk/sugar mixture, stir thoroughly; Add almond extract, pour into mold; Cool and refrigerate until set.  (An 8 x 8 pan will suffice.) Cut into 1" cubes and place in an attractive deep dish. Add chilled fruit w/syrup and serve. Suggested mix would be a mix of fruit cocktail and mandarin orange slices, but you can also use pineapple chunks, lychee, peaches, grapes, etc.).   Makes an attractive presentation if served in a parfait glass.
