Mauna Loa Coffee Cake

Ingredients

  • 2 cups Flour
  • 3/4 cup Brown Sugar
  • 2/3 cup Sugar
  • 1 jar (3.5 oz) Crushed Macadamia nuts
  • 1 teaspoon Cinnamon divided

  • 3/4 cup Buttermilk
  • 1 Egg
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda

Directions

Combine flour, brown sugar, sugar, macadamia nuts, 1/2 tsp of the cinnamon and melted butter.  Blend well to form a crumb mixture.

Measure out 1 cup of crumb mixture for topping and set aside.

Add the remaining 1/2 tsp cinnamon, buttermilk, egg, baking powder and baking soda to mixture; blend thoroughly.  Pour batter into a greased baking pan.

Sprinkle reserved crumb mixture over batter.  Bake.  Serve warm.
