Lemon Shoyu Chicken

Ingredients

  • 1/4 cup Vegetable Oil
  • 1/3 cup Lemon Juice
  • 1/4 cup Soy sauce (shoyu)
  • 2 tablespoons Sugar
  • 1 clove garlic
  • 1/2 teaspoon Ginger
  • 1 teaspoon Salt
  • 1/4 teaspoon Pepper

Directions

2-3 lbs of chicken thighs and/or drumsticks. Combine marinade ingredients and marinade chicken for 2-3 hours in refrigerator. Place chicken on rack of roasting pan. Roast at 325F for 1-hour, turning chicken over for the last 10 minutes. You can also pour the gravy from the pan over the cooked chicken and serve. Alternatively: Mix all the marinade ingredients and pour over chicken in a slow-cooker. Cook at low setting till done, approx 3-4 hours but will vary with your particular slow-cooker.
